About the Restaurant

Celebrity MasterChef Jereme Leung, one of the most influential chefs in the modern Chinese culinary movement, returns home to Singapore with 藝yì by Jereme Leung. 藝yì, which stands for art in the Chinese language, awakens your appetite and senses. Alluding to the fine art of Chinese dining, it references centuries of culinary mastery woven into the intricacies of Chinese cuisine presented in the restaurant. Featuring artistic adaptations of provincial cuisine from across the different regions of China, Jereme will be using single sourced and seasonal ingredients with a contemporary approach to deliver refinement and sincerity. 

Job Description

The Tea Sommelier is responsible for delivering exceptional tea service that complements the culinary experience at Yi by Jereme Leung. This role manages the restaurant's tea program, provides expert tea recommendations and pairings, conducts tea presentations, and enhances guest satisfaction through personalized tea experiences. The Tea Sommelier works closely with the restaurant management and service team to uphold the highest standards of hospitality while promoting Chinese tea culture and traditions.

Primary Responsibilities

Delivers Exceptional Tea Service

  • Provides professional tea recommendations based on guest preferences and menu selections.
  • Conducts traditional and contemporary tea service in accordance with yi by Jereme Leung standards.
  • Prepares and serves premium Chinese teas with proper brewing techniques, water temperatures, steeping times, and presentation standards.
  • Educates guests on tea origins, processing methods, flavor profiles, and cultural significance.
  • Performs tableside tea ceremonies and tea presentations when appropriate.
  • Maintains consistency in tea quality and service standards.

Enhances the Guest Dining Experience

  • Creates memorable tea experiences through personalized service.
  • Recommends tea pairings that complement menu offerings.
  • Anticipates guests' preferences and special requests.
  • Utilizes a Heartist® approach to ensure guests feel welcomed, valued, and engaged.
  • Promotes specialty teas and tea experiences to enhance guest satisfaction and revenue.

Manages the Tea Programme

  • Maintains tea inventory and par stock levels.
  • Ensures the quality, freshness, and proper storage of tea products.
  • Works with suppliers to source premium and specialty teas.
  • Assists in developing seasonal tea menus and pairing recommendations.
  • Monitors tea costs and minimizes product wastage.
  • Participates in monthly inventory counts and stock control procedures.

Supports Operational Excellence

  • Ensures accuracy and timeliness in tea preparation and service.
  • Maintains cleanliness and organization of tea stations and storage areas.
  • Ensures all equipment used in tea service is maintained in excellent condition.
  • Adheres to hotel policies, food safety requirements, and workplace safety standards.
  • Collaborates with the culinary team on menu development and pairing opportunities.

Training and Development

  • Conducts tea education and product knowledge training for service colleagues.
  • Shares information on tea preparation techniques, service rituals, and guest engagement.
  • Keeps current with emerging tea trends and industry developments.
  • Represents yi by Jereme Leung at tea-related events and promotional activities when required.

Other Responsibilities

  • Assists in the planning and execution of tea-focused events, masterclasses, and promotions.
  • Supports sustainability initiatives and responsible sourcing practices.
  • Contributes positively to the culture and service excellence standards of Raffles Singapore.
  • Develops own knowledge and skills to grow as a business partner and leader.
  • Contributes to the hotel’s Corporate Social Responsibility and sustainability efforts.
  • Performs any other duties and responsibilities that may be assigned.

Qualifications

Candidate's Profile

  • Diploma or Degree in Hospitality Management, Food & Beverage, Tea Studies, or a related discipline.
  • Professional Tea Certification (e.g., Tea Sommelier Certification, Chinese Tea Arts Certification, Tea Academy qualifications, or equivalent).
  • Minimum 3 years of experience in luxury food and beverage service, tea service, or specialty beverage operations.
  • Strong understanding of Chinese teas, tea-growing regions, tea production methods, and tea culture.
  • Experience conducting tea pairing recommendations and premium guest experiences.
  • Previous experience in luxury hotels or fine-dining establishments is preferred.
  • Advanced tea knowledge and tea preparation expertise.
  • Strong guest service and hospitality skills.
  • Excellent communication and presentation abilities.
  • Ability to conduct engaging tableside tea ceremonies.
  • Strong interpersonal and relationship-building skills.
  • Proficient in spoken and written English; additional languages, including Mandarin, are advantageous.
  • Well-groomed and professional in appearance.
  • Passionate about tea culture and continuous learning.
  • Reliable, organized, and detail-oriented.
  • Ability to work effectively within a team environment.
